Ahh – finally it’s grill season around here! We’ve been waiting so long for this warm weather and a chance to fire up the grill again. This sandwich is one of our favorite grilled chicken recipes. It’s delicious and easy to throw together. And it’s got bacon on it. And avocados. Need we say more?
This little sandwich was a creation of Marla’s a few years back. Well, minus the bacon. We had to add that in. It’s easy to customize to your taste – use your favorite marinade for the chicken – we like Italian Dressing when we’re feeling rushed and don’t have time to mix together a fancy marinade. Use your favorite kind of cheese – we like using pepper jack for the extra little kick. And even add in some baby spinach leaves if you’d like to get more veggies in! But do use ciabatta rolls if you can – they really make this sandwich. That and the balsamic mayo!
Chicken, Bacon, Avocado Sandwiches with Balsamic Mayo
grilled marinated chicken
pepper jack cheese slices
cooked bacon
avocado slices
balsamic mayo
ciabatta rolls – buttered & lightly toasted on the grill
For the balsamic mayo:
mayonnaise
balsamic vinegar
cayenne pepper
garlic salt
Add a few spoonfuls of mayonnaise to a small bowl. Add in a few dashes of balsamic vinegar, cayenne pepper and garlic salt. Adjust the seasonings to your liking – we don’t measure, just a few little shakes of each.
