Crunchy Sesame Salad

I love a good crunchy salad and this crunchy sesame salad really hits the spot! So much flavor and really satisfying. I love that the veggies in this salad last for a long time in the fridge because I always have great intentions of eating veggies really quickly but a lot of the softer veggies meet their mushy doom in my vegetable drawer. So I usually make this dressing and then can make the salad a few times over the course of a week or two. Which I prefer to eating the same meal like 10 times in a row. Haha. This is also a nice dish to bring to a family event or whatever you might need an easy dish to pass.

Crunchy Sesame Salad Ingredients:

• red cabbage
• green cabbage
• carrots
• red bell pepper
• edamame
• cashews
• cilantro
• wonton strips
• sesame seeds
• honey
• lime
• rice vinegar
• avocado oil
• low sodium soy sauce
• sesame oil
• ginger
• salt
• pepper

Ingredients

Salad

• red cabbage, sliced thin
• green cabbage, slice thin
• red bell pepper, sliced thin
• carrots, sliced thin or large shredded
• edamame, heated and removed from shell
• cashews, chopped
• cilantro, chopped
• wonton strips
• sesame seeds

Sesame Dressing

• 2 tbsp avocado oil
• 2 tbsp rice vinegar
• 1 tbsp sesame oil
• 1 tbsp soy sauce
• 1 tbsp honey
• juice of one lime
• 2 tsp fresh ginger, grated
• salt & pepper to taste

Instructions

Sesame Dressing

1. Combine all ingredients in blender or food processor and blend well.

Salad

1. Combine all of the salad ingredients and toss.

2. Add dressing right before serving.
