I love a good crunchy salad and this crunchy sesame salad really hits the spot! So much flavor and really satisfying. I love that the veggies in this salad last for a long time in the fridge because I always have great intentions of eating veggies really quickly but a lot of the softer veggies meet their mushy doom in my vegetable drawer. So I usually make this dressing and then can make the salad a few times over the course of a week or two. Which I prefer to eating the same meal like 10 times in a row. Haha. This is also a nice dish to bring to a family event or whatever you might need an easy dish to pass.

Crunchy Sesame Salad Ingredients:
- red cabbage
- green cabbage
- carrots
- red bell pepper
- edamame
- cashews
- cilantro
- wonton strips
- sesame seeds
- honey
- lime
- rice vinegar
- avocado oil
- low sodium soy sauce
- sesame oil
- ginger
- salt
- pepper
- red cabbage, sliced thin
- green cabbage, slice thin
- red bell pepper, sliced thin
- carrots, sliced thin or large shredded
- edamame, heated and removed from shell
- cashews, chopped
- cilantro, chopped
- wonton strips
- sesame seeds
- 2 tbsp avocado oil
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp honey
- juice of one lime
- 2 tsp fresh ginger, grated
- salt & pepper to taste

Combine all ingredients in blender or food processor and blend well.

Combine all of the salad ingredients and toss.

Add dressing right before serving.
